Ingredients
1/2 cup olive oil
1/2 cup lemon juice + 1 lemon cut into wedges
6-8 large potatoes, peeled and cut into wedges
1 cup vegetable broth
5-6 cloves garlic
2 tsp dried oregano
1 tsp dried thyme
Directions
Preheat your oven to 400°F (200°C).
In a large bowl, mix together the olive oil, lemon juice, broth, oregano, thyme, salt, and pepper.
Add the potato wedges to the bowl and toss until they are well coated with the mixture.
Transfer the potatoes to a baking dish, arranging them in a single layer. Top with the garlic cloves and lemon wedges.
