Greek white bean salad

This Salad is the perfect side dish. It’s loaded with fresh herbs and veggies, packed with protein and brimming with Mediterranean flavors.

Ingredients:

1 cup of white beans
1 green bell pepper, chopped
1 small onion, chopped
2 tomatoes, cut into small chunks
1 cucumber, sliced and quartered

2 tbsp Extra Virgin Olive Oil
2 tbsp freshly squeezed lemon juice
2 cloves garlic, minced
1 tsp dried oregano
freshly ground salt and pepper, to taste
fresh basil leaves for garnish

Directions

Place all salad ingredients into a large bowl and toss to combine.
In a small bowl, whisk together olive oil, lemon juice, garlic and oregano. Pour onto salad and toss again to well combine.
Garnish with some fresh basil leaves and enjoy.
Taste and add salt and pepper as you’d like.
