4 ripe peaches, peeled and diced
2 cups full-fat Greek yogurt
1 cup heavy cream (cold)
½ cup Greek honey (or sugar, adjust to taste)
1 teaspoon vanilla extract

Directions
Cut into small pieces 1 peach and set aside.
Puree the peaches: In a blender or food processor, blend the 3 diced peaches until smooth.
Whip the cream: In a separate bowl, whip the cold heavy cream until soft peaks form.
Combine: Gently fold the peach puree, Greek yogurt, honey, the peach pieces and vanilla extract into the whipped cream until fully combined and creamy.
Freeze: Transfer the mixture to a loaf pan or freezer-safe container. Smooth the top with a spatula.
Cover and freeze: Cover with plastic wrap or a lid and freeze for at least 4-6 hours, or until firm.
Serve: Let it sit at room temperature for a few minutes to soften slightly before scooping.
