Jam Cookie Sandwiches

JAM COOKIE SANDWICHES

 

Ingredients:

 

*250g / 8.8oz Flour

*200g / 7oz Butter

*100g / 3.5oz Icing sugar

*pinch of salt

*2 Egg yolks

*Jam of your choice

*Confectioners sugar

 

Directions:

 

Preheat the oven to 170C

Place the flour, butter, icing sugar and salt into a bowl.
Using your fingertips, rub the ingredients together until the mixture resembles breadcrumbs.
Add the egg yolks and mix until a dough forms.

Turn out onto a lightly floured work surface and roll out to a thickness of about 0.5cm
Cut out shapes using a 4cm cutter.

Divide the dough in half. Using a 2cm. cutter, make a hole in the middle of half of
the cookies and discard the dough.

Place all the cookies on a baking tray.

Bake for 10. minutes, or until light golden.
Remove and transfer to a wire rack to cool.

When cool, spread 1 tsp jam on the whole cookies and top with the cookies with the hole in them.

Dust with icing sugar and serve.
