If you’ve ever strolled through a Greek city in the morning, you’ve surely caught the scent of freshly baked koulouri from the corner bakeries.
But this time, we’re making it even better—stuffed with tangy feta cheese and a hint of oregano.
These sesame-crusted rings are soft and fluffy on the inside, with a satisfying crunch on the outside.
Perfect for breakfast, a snack on the go, or a savory addition to your mezze table.
And the best part? You can easily make them at home with simple pantry ingredients.Because sometimes, the most nostalgic flavors come from the simplest recipes.

For the dough
500g all-purpose flour
7g (1 sachet) dry yeast
1 tsp sugar
1 tsp salt
2 tbsp olive oil
300ml warm water (adjust slightly as needed)
For the filling
200g crumbled feta cheese
Optional: pinch of oregano or chopped fresh mint for extra aroma
For coating
½ cup water
2 tbsp honey or 1 tsp sugar
Sesame seeds (white or mixed white & black)
Directions
Prepare the dough:In a large bowl, mix the yeast, sugar, and warm water. Let it activate for 5–10 minutes.
Add the olive oil, flour, and salt. Knead until you have a soft, elastic dough (about 8–10 minutes).Cover and let it rise for about 1 hour, until doubled in size.
Prepare the filling: Mix the crumbled feta with oregano or mint if using. Set aside.
Shape the koulouria : Preheat your oven to 200°C (390°F).Divide the dough into 8 equal pieces. Roll each piece into a long rope (about 40–45 cm). Flatten each rope slightly with your fingers to create a wide strip. Place a spoonful of feta filling along the center.Carefully fold and seal the dough over the filling, then roll gently again to form a filled rope.Shape into a ring and pinch the ends to seal.
Coat the koulouria: Mix water and honey/sugar in a shallow bowl. Dip each ring into this mixture, then roll in sesame seeds.
Bake: Place koulouria on a parchment-lined tray and bake for 20–25 minutes or until golden and crisp.
