1 cup long grain rice (like basmati or jasmine)
2 tablespoons olive oil
1 small onion, finely chopped
2 cups water or vegetable broth
Zest of 1 lemon + Juice of ½ lemon (or more to taste)
Salt, to taste + Freshly ground black pepper, to taste
3–4 tablespoons fresh dill, finely chopped
Optional: lemon wedges for garnish

Directions
Rinse the rice under cold water until the water runs clear. Drain well.
In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
Stir in the rice and toast it for 1–2 minutes, until lightly fragrant.
Add the water or broth, lemon zest, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and liquid is absorbed.
Turn off the heat and let the rice sit covered for 5 minutes. Then fluff it with a fork.
Add the lemon juice and fresh dill. Gently toss to combine. Adjust seasoning if needed.
Serve warm or at room temperature, garnished with extra dill and lemon wedges.
