200gr chickpeas, drained and rinsed
200gr cannellini beans, drained and rinsed
2 cups cherry tomatoes, halved
2 English cucumbers, diced
1 red bell pepper, diced
1/2 red onion, finely chopped
1/4 cup Kalamata olives, pitted and sliced
1/4 cup fresh parsley, chopped
1 cup crumbled feta cheese
Dressing
1/4 cup extra virgin olive oil
2 tbsp red wine vinegar
1 tbsp lemon juice
1 clove garlic, minced
1 tsp dried oregano– Salt and pepper to taste
Directions
In a large bowl, combine the chickpeas, cannellini beans, cherry tomatoes, cucumber, red bell pepper, red onion, olives, and parsley.
In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, oregano, salt, and pepper until well combined.
Pour the dressing over the salad and toss everything together until the vegetables and beans are well coated with the dressing.
Cover the salad and refrigerate for at least 30 minutes to let the flavors meld together.
