Mediterranean Chicken Meatballs in Creamy Herb Sauce

These Mediterranean-style chicken meatballs are the kind of dish that fits perfectly into everyday home cooking. Light, juicy, and gently simmered in a creamy herb sauce, they bring comfort without feeling heavy. For the chicken meatballs

500 g ground chicken

1 small onion, finely grated

1 clove garlic, finely grated

1 egg

½ cup soft breadcrumbs

3 tablespoons extra virgin olive oil

1 teaspoon dried oregano

Salt and freshly ground black pepper

For the sauce

2 tablespoons extra virgin olive oil

1 clove garlic, finely chopped

½ cup chicken stock

1 cup cooking cream or light cream

Salt and black pepper, to taste

To finish

Dried oregano, for sprinkling

Fresh parsley, finely chopped

Directions

In a bowl, combine the ground chicken, onion, garlic, egg, breadcrumbs, olive oil, oregano, salt, and pepper. Mix gently just until combined. Shape into small meatballs and set aside.

Heat the olive oil in a wide pan over medium heat. Add the meatballs and cook, turning gently, until golden on all sides. Remove briefly to a plate.

In the same pan, add the chopped garlic and sauté for a few seconds until fragrant. Pour in the chicken stock and let it simmer for 2 to 3 minutes, scraping the bottom of the pan.

Lower the heat and add the cream. Stir gently and return the meatballs to the pan.

Simmer for 10 to 12 minutes, until the sauce thickens slightly and the meatballs are fully cooked.

Finish with a sprinkle of dried oregano and plenty of fresh parsley.

Serving Suggestions:

Serve warm with crusty bread, mashed potatoes, rice, or orzo. A simple green salad on the side completes this comforting Mediterranean-style meal.Creamy, aromatic, and easy enough for any day of the week.
