2 cups fresh spinach, roughly chopped
1 cup grated Greek kaseri cheese (or mozzarella if you can’t find kaseri
)½ cup crumbled feta cheese
2 tablespoons olive oil
Directions
Heat a large skillet over medium heat and add 1 tablespoon of olive oil.
Add the chopped spinach and sauté for 2–3 minutes until wilted. Season lightly with salt and pepper.
Remove the spinach from the skillet and wipe the skillet clean.
Lay out 2 tortillas and divide the kaseri, feta, and cooked spinach evenly over them. Top each with the remaining tortillas.
Heat the remaining olive oil in the skillet. Cook each quesadilla for 2–3 minutes per side, or until the tortillas are golden brown and the cheese is melted.
Cut into wedges and serve warm.
Optional: Serve with a side of tzatziki or a fresh tomato-cucumber salad.
