For the Tsoureki Dough
500g bread flour
80g sugar
1 tsp ground mahlepi
1 tsp ground mastic
10g dry yeast
120ml warm milk
2 eggs, lightly beaten
80g unsalted butter, melted
1 tsp vanilla extract
Zest of 1 orange
1/4 tsp salt
For the Filling
100g dark chocolate chips
1 tbsp butter
For the Glaze
1 egg yolk mixed with 1 tbsp milk
Directions
In a small bowl, dissolve the yeast in warm milk with 1 tablespoon of sugar.
Let it sit for 10 minutes until frothy.In a large mixing bowl, combine the flour, sugar, salt, mahlepi, and mastic. Mix well.Add the yeast mixture, beaten eggs, orange zest, vanilla extract, and melted butter.
Knead the dough until it becomes smooth and elastic (about 10 minutes).
If it’s too sticky, add a bit more flour.Place the dough in a lightly oiled bowl, cover with a cloth, and let it rise in a warm place for 1-1.5 hours or until doubled in size.
In a small pan over low heat, melt the chocolate and butter together.
Stir until smooth, then set aside to cool slightly.
Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
Punch down the dough and divide it into 10-12 equal portions.
Roll each piece of dough into a small circle and place about 1-2 teaspoons of the chocolate filling in the center.
Carefully fold the dough over the filling, pinch the edges to seal, and roll into a ball shape. Place the buns seam side down on the baking sheet.
Proof and Glaze:Cover the buns loosely with a cloth and let them rest for another 30 minutes to rise slightly.Brush the tops of the buns with the egg yolk and milk mixture.
