4 chicken thighs (bone-in, skin-on)
2 tbsp Dijon mustard
Juice of 1 lemon
4–5 lemon slices
3 tbsp olive oil
3 garlic cloves, minced
1 tsp dried oregano
2–3 sprigs of fresh rosemary or thyme
Salt and freshly ground black pepper
½ cup chicken broth or water
Optional: a drizzle of honey for balance (½ tsp)
Directions
Marinate the Chicken.
In a bowl, whisk together the Dijon mustard, lemon juice, olive oil, garlic, oregano, salt, and pepper. Coat the chicken thoroughly and let it marinate for 30 minutes (or overnight for deeper flavor).
Sear the Chicken.
In a large, deep skillet or pot, heat olive oil over medium heat. Place the marinated chicken skin-side down and sear until golden brown (about 5–6 minutes). Flip and sear the other side for 3–4 minutes.
Add Sauce Ingredients.
Once the chicken is browned, lower the heat.
Add the rest of the marinade, lemon slices, fresh herbs, and chicken broth (or water). Cover with a lid.
Simmer Gently
Let the chicken simmer on low heat for 25–30 minutes, or until it’s fully cooked through and tender. Check occasionally and spoon the sauce over the chicken as it cooks.
Optional Finish
For a glossy sauce, uncover the lid in the last 5 minutes to reduce it slightly. You can also add a touch of honey if the lemon is too sharp.
