French fries with eggs.
In just one pan, with minimal effort, we can prepare a beloved dish for all ages – French fries with eggs on top. This easy-to-make meal has been a staple for generations, and for me, it’s particularly associated with summertime, perhaps due to its quick preparation time. During the hottest months of the year, when spending time in the kitchen is less appealing, this dish is a perfect solution to satiate the hunger of both young and old.
To enhance the flavor, we can crack eggs on top of the French fries in the same pan and cook them together, adding a delicious twist to an already mouthwatering dish.
Ingredients
3-4 large potatoes, cut into strips
4 eggs
Salt, Pepper to taste
Oregano
Frying oil
Directions
Soak the potatoes in a bowl covered with water and a little salt for 15 minutes. Drain and dry.
Place a large frying pan over high heat. Add enough oil and wait for it to heat up. Once heated, add all the potatoes and spread them evenly in the pan. Let them fry for about 5 – 6 minutes, or until golden. Crack the eggs over the potatoes and with the help of a fork break up the yolks.
Carefully stir while frying, for about 2-3 minutes, until the eggs are done.
Remove immediately from the heat and transfer the potatoes with the eggs to a plate with a slotted spatula, being careful to drain the oil well. Season with salt and pepper, sprinkle with a little oregano and serve with feta cheese
