2 sheets of puff pastry, thawed

200g fresh spinach, chopped (or 150g frozen, thawed and squeezed dry)

150g feta cheese, crumbled

50g cream cheese

1 clove garlic, minced

1 egg, beaten

1 tsp olive oil

Salt and pepper, to taste

1 egg yolk (for glazing)

Sesame seeds or poppy seeds (optional, for garnish)

Directions

Heat olive oil in a pan and sauté garlic until fragrant.

Add spinach and cook until wilted. (Skip this step if using frozen spinach.)

Remove from heat, let cool slightly, and mix in feta, cream cheese, and beaten egg. Season with salt and pepper.

Preheat oven to 200°C (400°F).

Place one puff pastry sheet on a baking tray lined with parchment paper.

Spread the spinach-feta mixture evenly, leaving a 1-2 cm border around the edges.

Place the second puff pastry sheet on top.

Use a sharp knife to cut the pastry into a large triangle (the tree shape).

Save the scraps for other uses.

Lightly score the middle of the triangle vertically to mark the “trunk” without cutting through.

Cut horizontal lines on either side of the “trunk,” creating branches about 2 cm wide.

Gently twist each branch a few times to create a spiral effect.

Brush the entire tree with beaten egg yolk.

Sprinkle with sesame or poppy seeds for decoration, if desired.

Bake for 20-25 minutes, or until golden and puffed.

Let cool slightly before serving. Place on a festive platter for a beautiful holiday centerpiece!
