Steak Salad With Spinach & Arugula

STEAK SALAD WITH SPINACH & ARUGULA

 

 

 

 

This delicious salad is packed with fresh spinach, arugula and cheese, topped with seared steak, and drizzled with a balsamic vinaigrette! A fast and easy week-night dinner.

Ingredients:
*1½ cups arugula
*1½ cups baby spinach
*1 pint cherry tomatoes, halved
*1 steak
*⅓ cup crumbled blue cheese

For the vinaigrette
*½ cup Olive oil
*1 tbsp balsamic vinegar
*1 tsp  Dijon mustard
*1 garlic clove, minced
*salt and pepper to taste

For the Onion rings
*1 egg
*1⁄4 cup vegetable oil
*1/2 cup flour
*1 cup milk
*1⁄2 tsp salt
*1 tsp baking powder
*1 sweet onion, thinly sliced
*1⁄2 cup flour (for coating onions)
*oil (for frying)

Directions:

 

In a small bowl, combine the vinegar, mustard and garlic. Add the oil in whisking constantly. Season with salt and pepper to taste. Set aside.

Onion rings:
Mix egg, oil, and milk on low speed of mixer for 1 minute.
Add salt, flour and baking powder and mix until smooth. Coat onions in flour. Dip in batter.
When one side is golden turn to the other side. Fry in hot oil until desired shade of brown. Set aside.
Brush steaks with olive oil and sprinkle with salt and pepper. Preheat the pan until very hot and sear the steaks on first side. Flip and cook until desired doneness.
Cut steaks crosswise into strips.

Combine arugula, baby spinach and tomatoes in large bowl. Toss salad with enough dressing to coat. Season to taste with salt and pepper. Top with steak strips, onion rings and crumbled blue cheese.
