500g phyllo dough sheets or Homemade phyllo dough
300g feta cheese, crumbled
200gr mizithra cheese, or ricotta (optional for a milder taste)
1 egg
2 tbsp Greek yogurt
2-3 tbsp olive oil, for brushing the phyllo
A. sprinkle of oregano
Directions
Prepare the Filling:
In a bowl, mix the crumbled feta cheese, ricotta (if using), egg, yogurt, and pepper. Add herbs if desired. Mix well until creamy.
Prepare the Dough:
Lay out a phyllo sheet on a clean surface. Brush lightly with olive oil, and then place another sheet on top to make it thicker (or use single layers if you prefer).
Assemble the Rolls:
Cut each phyllo sheet into two equal strips lengthwise.
Place a tablespoon of the cheese filling near the bottom of each strip. Fold in the sides to enclose the filling, then roll up each strip tightly from the bottom to form a small, secure roll.
Repeat with the remaining filling and phyllo strips.
Bake:
Place the rolls on a baking sheet lined with parchment paper, seam-side down.
Brush each roll with a bit more olive oil for a golden finish.
Bake at 180°C (350°F) for about 20-25 minutes, or until golden brown and crispy.
Enjoy them warm as appetizers or snacks!
