2 cups of hummus
¼ cup kalamata olives
1½ cups cherry tomatoes, halved
1 cucumber, sliced
1 small red onion, sliced
2-3 tablespoons crumbled feta cheese
2-3 pepperoncini peppers, thinly sliced
1 clove garlic, minced, optional
½ teaspoon dried oregano
Salt and pepper, to taste
¼ cup olive oil
1 to 2 tablespoons finely chopped herbs, like parsley or mint, (plus extra for garnish)
A pinch of paprika for sprinkling
Lemon wedges for serving
Directions
In a bowl, toss the veggies, olives, red onion, and garlic with the oregano and olive oil.
Season generously with salt and pepper, then mix in the fresh herbs and feta cheese.
Spread the hummus evenly over a serving platter. Spoon the veggie mixture on top.
Garnish with extra herbs and a sprinkle of paprika.
Serve with lemon wedges on the side.
