My Mediterranean Greek Pantry

500g (4 cups) bread flour

1 packet (7g or 2 ¼ tsp) active dry yeast

1 tsp sugar

1tsp salt

250ml (1 cup) warm water

2 tbsp olive oil

200g (7 oz) feta cheese, crumbled

100g (3.5 oz) grated kefalotyri or parmesan cheese (optional for extra flavor)

1 tbsp oregano, ( optional)

Black pepper, to taste

A drizzle of olive oil

Olive oil, for brushing

Directions

In a small bowl, combine the warm water, yeast, and sugar.

Stir gently and let it sit for about 5-10 minutes until it becomes foamy.

In a large mixing bowl, combine the flour and salt. Make a well in the center and add the olive oil and activated yeast mixture.

Mix until the dough starts coming together.

Knead for about 8-10 minutes, until you get a soft, elastic dough. (If the dough feels too sticky, add a bit more flour; if it’s too dry, add a little water.)

Shape the dough into a ball, place it in an oiled bowl, and cover it. Let it rise in a warm place for 1-2 hours, or until it doubles in size.

In a bowl, mix the crumbled feta, grated cheese (if using), chopped herbs, black pepper, and a drizzle of olive oil. Stir gently to combine.

Preheat your oven to 180°C (350°F) and line your loaf pans with parchment paper.

Punch down the dough to release the air and divide it into 2-4 equal portions, depending on your preferred size for the breads.

Roll out each portion into an oval, about ½ inch thick.

Place a portion of the filling in the center of each dough.

Fold the edges over the filling and press gently to seal, creating a filled, oval loaf.

Place the loafs on the prepared pans.

Brush the tops with olive oil and sprinkle with 1 tbsp grated cheese.

Bake for about 25-30 minutes, or until golden brown and baked through.

Let cool slightly and enjoy warm.

Tyropsomo can be served as a side with salads, soups, or on its own as a delicious snack.
