Shop the Ingredients

3 kg pork shoulder, skin-on, boneless

3-4 tbsp olive oil

Salt

3 garlic cloves

3-4 sprigs rosemary

For serving:

Roasted potatoes

Black pepper

Directions

Preheat your oven to 180°C (fan).

Score the pork skin in a crisscross pattern using a knife. Lightly score the meat side as well. Place the pork on a sheet of parchment paper with the skin facing up.

Rub the pork with olive oil and salt. Add the garlic cloves and rosemary sprigs to the parchment paper.

Wrap the pork tightly in the parchment paper and then in aluminum foil. Place it on a baking tray with a rack, ensuring the skin is still facing up.

Roast for 4 to 4½ hours.

Uncover the pork, increase the oven temperature to 200°C (fan), and roast for an additional 20-25 minutes to crisp up the skin.

Serve with roasted potatoes and a sprinkle of black pepper.
