Greek Yogurt Cream Cheese Spread

All you need is full-fat Greek yogurt, a little lemon juice, salt, and time. Overnight, the yogurt slowly transforms into a rich spreadable cream cheese consistency without any complicated process.

Spread it over fresh bread and finish it with honey for a sweet version, or serve it with olive oil, herbs, cucumber, and tomatoes for something savory.

425 g full-fat Greek yogurt

1/2 tsp salt

1 tbsp fresh lemon juice

Honey, for serving (optional)

Directions

In a bowl, mix the Greek yogurt, salt, and lemon juice until smooth and fully combined.

Line a strainer with cheesecloth or a few layers of paper towel and place it over a bowl. Add the yogurt mixture into the lined strainer and wrap it tightly.

Place a small weight on top and refrigerate overnight, or for 12 to 24 hours, so the excess liquid drains out.

The next day, uncover it and you’ll have a thick, creamy spread with a cream cheese texture.

Serve on fresh bread with a drizzle of honey.

Tips• The longer it drains, the thicker it becomes.• Use full-fat Greek yogurt for the best texture and flavor.

You can also add herbs, garlic, or olive oil for a savory version.
