Feta Cheese Dip with Roasted Cherry Tomatoes

For the dip:
200g feta cheese
100g Greek yogurt
1 tbsp olive oil
1 small garlic clove, minced (optional)
½ tsp dried oregano or thyme
Freshly ground black pepper
For the roasted cherry tomatoes:
200g cherry tomatoes, halved
1 tbsp olive oil
½ tsp dried oregano
Salt & black pepper to taste
½ tsp honey (optional, for caramelization)
Directions
Roast the Tomatoes:
Preheat the oven to 200°C (400°F).
Toss the cherry tomatoes with olive oil, oregano, salt, pepper, and honey (if using).
Spread them on a baking sheet and roast for 15–20 minutes, until soft and slightly caramelized.
Prepare the Feta Dip:
In a food processor, blend feta cheese, Greek yogurt, olive oil, garlic (if using), oregano, and black pepper until smooth and creamy.
If needed, add a little more olive oil or a splash of lemon juice for extra creaminess.
Assemble & Serve:
Spread the whipped feta dip onto a serving plate or bowl.
Top with the roasted cherry tomatoes and drizzle with a little extra olive oil.
Garnish with fresh basil or thyme leaves (optional).
