2 pork tenderloins (about 500g each)
4 tbsp olive oil
2 tbsp lemon juice (freshly squeezed)
1 tbsp red wine vinegar
4 garlic cloves, minced
2 tsp dried oregano
1 tsp dried thyme
1 tsp paprika
1/2 tsp ground cumin (optional, for extra flavor)
1/2 tsp ground black pepper
1 tsp sea salt
1/4 tsp crushed red pepper flakes (optional, for a bit of heat)
1 tbsp fresh rosemary (optional, chopped)
Directions
Marinate the Pork:
In a bowl, whisk together olive oil, lemon juice, red wine vinegar, minced garlic, oregano, thyme, paprika, cumin, salt, pepper, and red pepper flakes.
Place the pork tenderloins in a large resealable plastic bag or shallow dish.
Pour the marinade over the pork, ensuring it’s well coated.
Seal the bag or cover the dish and refrigerate for at least 2 hours or overnight for deeper flavor.
Roast the Pork:
Preheat your oven to 200°C (400°F).
Heat a large oven-safe skillet (or cast-iron pan) over medium-high heat. Add a bit of olive oil to the pan.
Remove the pork from the marinade (reserving the marinade) and sear the tenderloins for about 2 minutes per side, until golden brown
Pour the reserved marinade into the pan and transfer it to the oven.
Roast the pork for 15-20 minutes, or until the internal temperature reaches 63°C (145°F) for medium doneness.
Rest and Serve:
Remove the pork from the oven and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.
Slice into medallions and serve with roasted vegetables, Greek salad, tzatziki, or pita bread.
