Cretan Tsigaristo Lamb: A Taste of Tradition
One of Crete’s most beloved dishes, Tsigaristo Lamb is a simple yet flavorful recipe that embodies the island’s culinary philosophy: quality ingredients and slow cooking. The name “tsigaristo” comes from the Greek word tsigaro, meaning to sizzle, which perfectly describes the cooking process.
The Secret? Olive Oil and Patience.
Tender pieces of lamb, typically from the shoulder, are slow-cooked in generous amounts of extra virgin olive oil. Salt is the only seasoning, allowing the rich flavor of the meat to shine. Some versions include a splash of white wine for added depth.
Cooking Process:
The lamb is seared in olive oil until golden.
It’s then covered and simmered over low heat for about 2 hours, ensuring it stays juicy and tender.
How to Serve:
Tsigaristo lamb is traditionally paired with crispy fried potatoes or roasted seasonal vegetables. It’s also a fantastic meze, perfect for sharing with friends over a glass of Cretan raki.

1 kg lamb (front shoulder cut, suitable for stewing)
1 to 1.5 cups olive oil
Optional: ½ cup white wine
Fresh lemon juice
Directions
First, rinse the lamb pieces thoroughly and pat them dry with paper towels.
In a pot, add olive oil and place the lamb pieces side by side before the oil heats up.
Season with salt and let them brown over medium heat.
Flip the pieces, season again, and allow them to brown on the other side.
If you want to add wine, pour it in at this stage. Otherwise, cover the pot, reduce the heat to low, and simmer gently for about 2 hours , until the lamb is fully cooked.
If you prefer to use lemon, add it at the end of cooking.
Once done, remove from heat, sprinkle with freshly ground pepper, and serve.
Traditionally, only high-quality olive oil and salt were used for this dish. In modern variations, wine or lemon can also be included for added flavor.
Serve with fried potatoes, roasted potatoes, or enjoy it as a flavorful appetizer on its own.
