Ingredients

1 Greek koulouri

1 poached egg

2 slices of bacon, cut into strips

1-2 tbsp of your preferred grated cheese

Directions

In a skillet, fry the bacon until it’s crispy.

Transfer it to a paper towel to drain any excess fat.

Bring a pot of water to a gentle simmer and add a tablespoon of vinegar.

Crack the egg into a small cup and carefully slide it into the simmering water.

Let it poach for 3-4 minutes, or until the whites are set but the yolk remains runny.

Use a slotted spoon to remove the egg, then drain on paper towels.

Place the koulouri on a plate, then sprinkle a generous amount of grated cheese into the center.

Place the poached egg in the middle of the koulouri, followed by the crispy bacon strips.

Optional step: If you’d like, place the filled koulouri under the broiler for 1-2 minutes to lightly melt the cheese.
