Ingredients
500g lamb leg or shoulder, cut into bite-sized cubes
1 red bell pepper, cut into chunks
1 yellow red pepper, cut into chunks
1 green bell pepper, cut into chunks
10-12 cherry tomatoes
Wooden or metal skewers
For the Marinade:
3 tbsp olive oil
2 tbsp lemon juice
2 garlic cloves, minced
1 tsp dried oregano
1 tsp dried thyme
½ tsp ground cumin (optional)
½ tsp smoked paprika
Salt & freshly ground black pepper, to taste
For Serving:
Fresh chopped parsleyLemon wedges
Directions
Prepare the Marinade:
In a bowl, mix olive oil, lemon juice, garlic, oregano, thyme, cumin, paprika, salt, and pepper.
Marinate the Lamb:
Add the lamb cubes to the marinade, coat well, cover, and refrigerate for at least 2 hours (or overnight for deeper flavor).
Assemble the Skewers:
Thread the lamb cubes onto skewers, alternating with bell peppers, onion, and cherry tomatoes.
Grill the Souvlaki:
Preheat the grill or grill pan to medium-high heat.
Cook the skewers for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your preferred doneness.
Serve & Enjoy:
Serve hot with warm pita bread, tzatziki, and lemon wedges.
