Roasted Salmon With Potatoes Carrots & Broccoli







Just a few ingredients make this quick and tasty recipe perfect dinner idea for a busy weeknight.




*4 salmon fillets 

*1 head broccoli 

*6 Yukon gold potatoes , cut into quarters

*5 carrots , sliced

*juice of 1 lemon

*5 tbsp extra virgin Olive oil

*1 1/2 tsp dried oregano 

*1/2 tsp garlic 







Preheat oven to 400 degrees. On a sheet pan (lined with parchment paper ), toss carrots, potatoes and broccoli in 3 tablespoons olive oil, 1 teaspoon oregano 1/2 tsp garlic, salt and pepper. Bake for 30 minutes, until potatoes begin to soften. 

While the vegetables bake, marinade the salmon. In a shallow baking dish, whisk together lemon juice, 2 tablespoons olive oil and 1/2 tsp oregano.

Place salmon fillets flesh-side-down in marinade. Allow to rest until vegetable baking time is up. 

Remove vegetables from oven and push to the side of the pan (veggies will continue baking with the salmon). Add salmon, flesh-side-up, to the pan. 

Bake for 12 minutes, until flaky.
