1 package puff pastry (2 sheets), thawed

2 cups fresh spinach , chopped (or 1 cup frozen, thawed and drained)

2 cups feta cheese

1 tbsp fresh mint, chopped

1 egg, beaten (for egg wash)

1/2 tsp salt +1/4 tsp pepper

For fresh spinach: sauté in a pan over medium heat until wilted.

For frozen spinach: ensure it’s fully thawed and well-drained.
