4 puff pastry sheets

200g baby spinach, washed, thoroughly dried, and finely chopped

4 green onions, finely sliced

150g Greek feta, crumbled

50g Greek kefalotyri cheese or Parmesan, finely grated

1 egg, whisked

Salt and pepper, to taste

Directions

Preheat your oven to 180°C (fan-forced).

Line two baking trays with parchment paper. Ensure the spinach is completely dry—use paper towels to remove any excess moisture.

Combine the spinach, spring onions, feta, kefalotyri , salt, and pepper in a bowl.

Mix until a thick, spreadable paste forms.

Lay one sheet of puff pastry on a flat surface. Spread the spinach mixture evenly over the pastry, leaving a small border along one edge. Roll the pastry tightly into a log, sealing the edge by pressing gently.

Cut the rolled log into 2cm-thick slices. Arrange the pinwheels on the prepared baking trays, ensuring they are spaced out. Lightly brush each pinwheel with the whisked egg.

Bake in the preheated oven for about 20 minutes, or until the pinwheels are puffed and golden. While they bake, prepare a yogurt dip if desired. Let the pinwheels cool for about 10 minutes before serving.
