SUMMER CHERRY DELIGHT

Yummy Petit Beurre biscuits, homemade cherry syrup and delicious vanilla custard all topped with a delicious layer of Juicy cherries and refreshing cherry Jello!!

 

 

Ingredients:

 

*1 pack petit beurre , biscuits

*2 cups fresh cherries, pitted

*2 packs cherry Jello

 

For the cream:
*300 g heavy wiping cream
*140 g granulated sugar
*700 g milk
*80 g corn starch
*1 egg yolk
*1 tablespoon vanilla extract
*50 g butter

 

For the syrup:
*1 cup fresh cherries (pitted and cut in half)
*1 cup sugar
*1 cup water

 

 

Directions:

 

First prepare the jelly according to package instructions. Place in the fridge.
Arrange biscuits in the bottom of a container  .

 
For the syrup:
Bring cherries, water and sugar to a boil,

Simmer for 2 minutes giving the cherries a chance to soften and the flavor to release.
Strain syrup in a find strainer pressing the cherries though leaving just the skin on the cherries to discard.

 
For the cream:
In a pot, add 500 g milk, the heavy cream and 100 g sugar.

Place over medium heat, bring to a boil and remove.

In a bowl, add 200 g milk, corn starch, 40 g sugar, the vanilla extract and the egg yolk. Whisk until the sugar melts completely.

As soon as the milk boils, remove from heat and slowly pour it into the bowl with the egg yolk while whisking continuously.

Transfer the new mixture to the pot and place over medium heat. Cook for 3-4 minutes until the cream thickens while whisking continuously.

Remove from heat and add the butter. Whisk until it melts and is incorporated.
Pour all of the syrup over the biscuits with a ladle.

Spread the cream over biscuits with a spatula and top with cherries.
Pour cooled jelly over the top ,and place to the fridge (make sure jelly sets evenly).
When jelly is firm, using a knife, cut it into pieces.
