Tomato Cucumber Avocado Salad

TOMATO CUCUMBER & AVOCADO SALAD

Craving something light and refreshing? Try this simple tomato, cucumber and avocado salad, topped with parsley, feta  and a lime vinaigrette.

 

This dish, which is as beautiful as it is nourishing, is the perfect summer side to serve at a barbecue. It also makes a nice light lunch, or could be served alongside a couple of poached eggs and toast for a hearty breakfast.

 

Ingredients:

 

*3 tbsp Olive Oil

*1 tbsp freshly squeezed lime juice

*1 tsp dried oregano

*1/2 tsp salt, plus more to taste

*1/4 tsp pepper, plus more to taste

*1/2 onion, thinly sliced

*2 cups cherry tomatoes, halved

*1 cucumber, sliced

*1 avocado, halved, pitted, peeled and cut into cubes
*1 cup crumbled feta cheese

*2 tbsp fresh parsley, roughly chopped

Directions:

 

In a small bowl, whisk olive oil, lime juice, oregano, salt and pepper to combine.
In a large bowl, toss onion, tomatoes, cucumber, avocado, feta and parsley with dressing.

Transfer to a serving platter and add a pinch of salt and pepper.
Serve immediately or store in an airtight container and refrigerate up to 2 days.
