Ingredients
500g fresh cheese tortelloni
2 tbsp olive oil
2 cloves garlic, minced
1 can (400g) crushed tomatoes
1 tsp dried oregano
½ tsp red pepper flakes (optional)
Salt & black pepper to taste
100g feta cheese, crumbled
¼ cup Greek yogurt
Fresh basil or parsley for garnish
Directions
Cook the tortelloni according to package instructions, then drain and set aside.
Make the sauce: In a pan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
Add the tomatoes along with oregano, red pepper flakes, salt, and pepper. Let it simmer for 10–12 minutes, stirring occasionally.
Stir in the feta cheese, allowing it to melt slightly into the sauce. If using, add Greek yogurt for extra creaminess.
Combine with the tortelloni and toss gently to coat.
Serve hot, garnished with fresh basil or parsley.
