VEGAN MIXED BERRY LOAF CAKE
My family loves fresh berries just about any way, but this loaf cake is a favorite at breakfast, as a delicious snack or quick dessert. Moist, fluffy, delicious and Vegan!!
*450g / 15.8oz flour
*1 1/2 tsp. baking powder
*¼ tsp. salt
*1 cup vegetable oil
*1 tbsp white vinegar
*2 cups granulated sugar
*1 cup almond milk, unsweetened
*1 /2 cup applesauce, unsweetened
*1 /4 cup fresh lemon juice
*zest of 1 lemon
*1 tsp. vanilla extract
*2 1/2 cups blueberries + cranberries marinated ( see notes )
Preheat oven to 150C. Grease and flour two loaf pans.
In a medium bowl, sift the flour, baking power and salt and mix well.
In the bowl of a stand mixer, fitted with a paddle attachment, cream the oil and sugar together until fluffy.
Add the almond milk, vanilla , applesauce, lemon juice & zest and beat until well combined.
Add the dry ingredients and mix well until creamy and fluffy.
Fold in the marinated berries and mix lightly.
Spread the batter into the prepared pans and bake in the preheated oven for 1 hour.
Cool completely before cutting.
1 cup balsamic vinegar
3 tbsp brown sugar
1 tsp vanilla extract
2 1/2 cups blueberries + cranberries
In a small bowl, whisk together the balsamic vinegar, brown sugar and vanilla.
Pour the balsamic vinegar mixture over the berries. Let the fruit marinate for 1 hour.
Drain the marinade.
