Patates Lemonates

6-8 large potatoes, peeled and cut into wedges
1/2 cup olive oil
1/2 cup lemon juice (about 2-3 lemons)
1 cup chicken or vegetable broth
3 cloves garlic, minced
2 tsp dried oregano
1 tsp dried thyme
Salt and pepper to taste

Directions


Preheat your oven to 400°F (200°C).
In a large bowl, mix together the olive oil, lemon juice, broth, garlic, oregano, thyme, salt, and pepper.
Add the potato wedges to the bowl and toss until they are well coated with the mixture.
Transfer the potatoes to a baking dish, arranging them in a single layer.
Pour any remaining mixture from the bowl over the potatoes in the baking dish and bake for 1 hour or until the potatoes are tender and golden brown, stirring occasionally to ensure even cooking.
Serve patates with feta cheese

    We have been to Greece 40 times and this dish is one of our favourites unfortunately chips are becoming more common. One of the reasons we love Greece is the food please don’t let this wonderful traditional cuisine be adulterated by pressure from visitors.
