4 large red bell peppers

200g feta cheese, crumbled

2 tbsp Greek yogurt (optional, for creaminess)

1 tbsp olive oil

1 garlic clove, minced

1 tsp dried oregano

Freshly ground black pepper

Directions

Roast the Peppers: Preheat the oven to 200°C (400°F). Cut the tops off the peppers and remove the seeds. Place them on a baking sheet and roast for about 20 minutes until slightly softened. Let them cool slightly.

Prepare the Filling: In a bowl, mix the crumbled feta, Greek yogurt, olive oil, minced garlic, oregano, and black pepper.

Fill the Peppers: Stuff each roasted pepper with the feta mixture. Drizzle with a bit of olive oil on top.

Bake Again (Optional): Place the filled peppers back in the oven at 180°C (350°F) for 10-15 minutes until warm and slightly golden on top.
