HONEY PEANUT BUTTER COOKIES
*1/2 cup butter softened
*1 cup peanut butter
*1 cup honey
*2 large eggs, lightly beaten
*2 teaspoons pure vanilla extract
*3 cups all-purpose flour
*1 cup sugar
*1 1/2 teaspoons baking soda
*1 teaspoon baking powder
*1/2 teaspoon salt
*1/2 cup of sugar for rolling dough balls
Preheat oven to 350° F. Line baking sheets with parchment paper.
In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, beat shortening, peanut butter and honey on medium speed until well combined and fluffy – about 3 minutes.
Add eggs and vanilla mix well.
In a large bowl, whisk together flour, 1 cup of sugar, baking soda, baking powder and salt. Gradually add the dry ingredients into the peanut butter mixture and mix on low speed until combined.
Using a cookie scoop , (about 2 tablespoons) form dough into balls, roll in sugar, and place on prepared baking sheets. Flatten with a fork.
Bake in preheated oven for 10-12 minutes. Allow cookies to cool on baking sheets for about 5 minutes before removing to a wire rack to cool completely.
– Cookies will store well in an airtight container at room temperature for up to 3 days.
