2-3 medium zucchinis, sliced into thin slices
1 cup all-purpose flour
2 eggs, beaten
Salt and pepper to taste
Olive oil for frying

Directions

Heat olive oil in a large skillet over medium-high heat.
In a shallow dish, season the flour with salt and pepper.
Dip the zucchini slices into the beaten eggs, then coat them with flour, shaking off any excess.
Carefully place the coated zucchini slices into the hot oil, frying them in batches until golden brown and crispy, about 2 minutes per side.
Once fried, transfer the zucchini slices to a plate lined with paper towels to drain any excess oil.

Serve the kolokithakia with tzatziki sauce on the side.
