NO BAKE VANILLA CARAMEL CAKE
*2 boxes of vanilla instant pudding
*1 tsp vanilla extract
*1 pkt of cream crackers or petit beurre biscuits
*220 g / 7.7 oz Whipped cream
*1 cup chocolate chips
*2 tbsp fresh lemon juice
*Caramel sauce for garnish
Prepare the vanilla pudding, according the box directions. Mix in the chocolate chips, set aside.
With a hand mixer or in the bowl of a stand mixer, whip the cream and fresh lemon juice, until it just holds, stiff peaks. (Add sugar if desired )
Arrange biscuits in the bottom of a dish.
Spread the pudding mixture over the biscuits
Top with whipped cream. Chill for at least 4 hours . Top with caramel sauce and serve.
