PEANUT BUTTER BLONDIES

Ingredients:
*1 large sweet potato cubed and steamed until soft
*Half a cup and 2 tablespoons flour
*Half a cup ground almonds
*1 cup date paste
*3 tablespoons maple syrup
*1 teaspoon baking powder
*1 teaspoon vanilla extract
*1/3 cup 1 tablespoon peanut butter
*1 cup of dark chocolate cut into chunks.
Directions:
Heat oven to 180C. Line a brownie tin with baking paper. Add all ingredients apart from the chocolate chunks to a food processor.
Blend until well combined. By hand stir in the chocolate chunks. Simply pour the blondie mixture in to the brownie tin.
Cook for 20-25 mins!
